Tom Kha Gai – asiatische Kokos-Suppe mit Black Tiger Prawns

Oder sollte ich lieber sagen: „Sawat die krab!“, denn heute gibt es ‚Tom Kha Gai‘!
Tom Kha Gai ist eine Variante der thailändischen Nationalsuppe – der ‚Tom Yam Kung‘.
Tom Yam Kung ist eine sauer-scharfe Suppe, die hauptsächlich aus Brühe besteht und mit Galgant, Zitronengras und Kaffir-Limetten-Blättern gekocht wird. Für die Schärfe sorgt Chili, für die Säure die Schalen der Tamarinden-Früchte. Als Einlage dienen Pilze und Garnelen.

Schon als kleines Kind gab es bei uns immer mal wieder thailändische Küche, denn ein Bruder meiner Großmutter ist mit einer Thai verheiratet und lebte bis er vor einigen Jahren starb auch in Thailand. Immer wenn die beiden auf Deutschland-Besuch waren, musste Mara vor allem für meine Oma, die dann immer im totalen Thailand-Fieber war, typische Gerichte zubereiten. Das ganze Haus duftete dann immer nach den für unsere europäischen Nasen ungewohnten und zum Teil gewöhnungsbedürftigen asiatischen Aromen – alles was Mara uns zubereitet hat war aber immer pure Gaumenfreude! Nur hier sind Sie immer willkommen, zusammen mit gold rush game free du hast kein gleiches!

Vor kurzem bin ich dann wieder mit ‚Tom Khai Gai‘ – wie man die Variante der Tom Yam Kung nennt, wenn sie mit Hühnchen-Fleisch und Kokosmilch zubereitet wird, nennt – in Berührung gekommen, als mich Johann Lafer Anfang Februar mit zum ‚Ball des Sports 2014‘ in Wiesbaden genommen hat. Dort sorgten Johann und sein Team (und ich durfte tatsächlich mitmachen) für das leibliche Wohl der Gäste. Unter anderem wurde dort auch ‚Tom Kha Gai‘ serviert. Ich war begeistert von den Aromen und so nahm ich mir damals schon vor, auch für Euch einmal diese Köstlichkeit zuzubereiten… hier ist nun meine Variante!

Zutaten

für 4 Personen

Suppe | 80g Galgant (alternativ Ingwer) • 3 dicke Stangen Zitronengras • 4 Kaffir-Limetten-Blätter • 1 Bund frischer Koriander • 1 Vanilleschote (nur die Schote) • 2 Tomaten • 3 Zehen Knoblauch • 1 kleine rote Chili-Schote • Saft von ½  Limette • 600ml Hühnerfond • 400ml Kokosmilch • 1TL Zucker • 1 EL Sesamöl| Einlage | 4 große Karotten • 200g Shimeji-Pilze • 2 Bund Frühlingszwiebeln • 200g Sprossen • 300g Hähnchenbrust • 1 Stange Zitronengras • 1 Knoblauchzehe • 500ml Hühnerfond • 3 EL Sweet Chili Sauce • 1 Schuss Fischsauce • 1 EL Sesamöl | Garnelen | 4 Black Tiger Garnelen • Mark einer Vanilleschote • 1 TL Zucker • Chilipulver • etwas Limetten-Abrieb • 1 EL Sesamöl • Meersalz, schwarzer Pfeffer

Zubereitung Suppe
  • Galgant schälen und in Scheiben schneiden. Das Zitronengras mit dem Messerrücken anschlagen, sodass sich sein Aroma entfalten kann. In Stücke schneiden. Die Knoblauchzehen mit der flachen Seite des Messers andrücken.
  • Die Vanilleschote der Länge nach aufschneiden und das Mark herauskratzen. Den Koriander waschen, trocken tupfen und samt den Stielen grob hacken. Die Chili von den Kernen befreien und in Ringe schneiden.
  • In einem Topf das Sesamöl erhitzen. Galgant, Zitronengras, Knoblauch, die Kaffir-Limetten-Blätter, den Koriander, die Chili und die Schale der Vanilleschote darin bei mittlerer Hitze anschwitzen.
  • Den Zucker darüber geben und alles kurz karamellisieren lassen. Hühnerfond angießen und aufkochen lassen.
  • Alles ca. 10 Minuten köcheln lassen.
  • Die Tomaten waschen, vierteln und dazu geben. Kokosmilch angießen und alles erneut für ca. 5 Minuten köcheln lassen.
  • Suppe durch ein Sieb in einen zweiten Topf abgießen und mit dem Limettensaft abschmecken. Warm stellen.
Kleine Warenkunde: Galgant & Kaffir-Limetten

‚Galgant‘ oder auch ‚Thai-Ingwer‘ genannt, ist die Wurzel eines Ingwergewächses und kommt ursprünglich aus Südostasien. Verwenden kann man lediglich die verdickten Wurzelstöcke. Der ‚kleine Galgant‘  ist mit seinem orange-roten Fleisch relativ scharf und außerhalb Chinas, wo er zur Heilbehandlung eingesetzt wird, nur getrocknet und in Scheiben erhältlich. Für die Küche ist diese Form des Galgant eher zu vernachlässigen. Hier lässt sich der ‚große Galgant‘ einsetzen, dessen dünne, bräunliche Haut ein weißes Fleisch umgibt. Der große Galgant ist im Geschmack eher mild, leicht säuerlich und nach Ingwer duftend.

Kaffirlimettenblätter sind typisch für die thailändische Küche. In Thailand werden die nach Zitrone duftenden Blätter häufig ganz mitgekocht. Dann werden die Blätter jedoch nicht mitgegessen, sondern vorab entfernt. Allerdings können die Blätter auch in hauchfeine Streifen geschnitten und dann den Gerichten beigemischt werden. In klein geschnittener Form entfalten die Blätter ihr Aroma noch besser und können auch problemlos mitgegessen werden. Kaffirlimettenblätter haben ein starkes Zitrusaroma, das wunderbar mit anderen Zutaten aus der asiatischen Küche harmoniert. Kombiniert werden können die Blätter beispielsweise mit Kokosmilch, Knoblauch, Ingwer, Galgant, Chili oder Basilikum.

Zubereitung Einlage
  • Die Hähnchenbrust waschen, trocken tupfen und von Fett sowie Sehnen befreien. Grob zerkleinern. Die Zitronenstange in Stücke schneiden, die Knoblauchzehe andrücken.
  • In einem Topf den Hühnerfond zusammen mit dem Zitronengras und der Knoblauchzehe zum Kochen bringen.
  • Hähnchen hinein geben und in 8-10 Minuten garen.
  • Die Hähnchenbrust aus dem Fond nehmen und mit Hilfe von 2 Gabeln in kleine Stücke ‚zerreißen‘.
  • Die Möhren schälen, vom Strunk befreien und in sehr feine Stifte schneiden oder hobeln. Die Frühlingszwiebeln waschen und in feine Ringe schneiden. Die Sprossen ebenfalls waschen und trocken tupfen.
  • Die Pilze in kleine Stücke schneiden. Kleinere Exemplare ruhig ganz lassen.
  • In einer Pfanne das Öl erhitzen. Die Karotten darin bei mittlerer Hitze 2-3 Minuten andünsten. Die Frühlingszwiebeln und die Pilze dazu geben und alles für weitere 2-3 Minuten dünsten. Zum Schluss die Sprossen und das Hühnchen dazu geben.
  • Wenn alles schön weich geworden ist, das Gemüse mit der Sweet Chili Sauce sowie der Fischsauce und Salz & Pfeffer nach eigenem Gusto abschmecken.
  • Warm stellen.
Zubereitung Garnelen
  • Die Köpfe der Garnelen mit einer Drehbewegung vom Körper ablösen.
  • Nun schälen wir die Garnelen: von der Unterseite her die Schale mit den Fingern rundherum ablösen (eventuell das letzte Schalenglied mit der Schwanzspitze stehen lassen).
  • Den Rücken mit einem Messer nicht zu tief einschneiden und dann mit Hilfe der Messerspitze den dunklen Darm der Garnele herauslösen.
  • Garnelen waschen und trocken tupfen.
  • Das Sesamöl in einer Pfanne erhitzen.
  • Den Zucker und das Vanillemark dazu geben und den Zucker schmelzen lassen.
  • Die Garnelen hinein geben und bei mittlerer Hitze von jeder Seite für 2-3 Minuten anbraten.
  • Mit Chili und Limettenabrieb sowie Salz & Pfeffer würzen.
Anrichten
  • In 4 tiefe Teller oder Schalen einen Servierring von 5cm Durchmesser setzten. Die Gemüse-Hühnchen-Einlage auf die 4 Ringe verteilen. Ringe abziehen.
  • Die Suppe mit einem Pürierstab schaumig aufmixen und auf die 4 Teller verteilen.
  • In die Mitte der Teller jeweils eine Garnele setzen und eventuell mit einem Koriander-Blatt dekorieren.

Wie Ihr der Zutatenliste entnehmen konntet, werden für die Suppe auch typisch asiatische Lebensmittel verwendet, die man bei uns nicht unbedingt kennt. Als Einkaufstipp für Galgant und Kaffir-Limetten-Blätter kann ich euch nur gut sortierte Asia-Läden ans Herz legen!
