Speckbrot | nach Christian Jürgens***

„Hallo mein Name ist Fabian – ich bin speckbrot-süchtig.“ Solche Aussagen müsst Ihr auch bald treffen, nachdem Ihr den ersten Bissen dieser fiesen Köstlichkeit probiert habt. Ich warne euch: Weiterlesen auf eigene Gefahr!

Speck – Baguette – Pilze – Rahm. Hört sich nicht gleich spektakulär an, und das soll es auch gar nicht sein. Was Christian Jürgens in seinem 3-Sterne-Restaurant ‘Überfahrt‘ am Tegernsee gerne als Zwischengang serviert, ist nicht mehr als ein ‘Speckbrot‘… auf den zweiten Blick aber sicher eine Hommage an seine Herkunft und die Region, die ihm die tollen Produkte für seine Küche schenkt. Nur hier sind Sie immer willkommen, zusammen mit games gold rush du hast kein gleiches!

Das Geschmacks- und Munderlebnis ist dabei ein ganz besonderes. Das komplett mit Pilz-Rahm vollgesogene und dank der Nussbutter trotzdem rösche Baguette zerknuspert am Gaumen und gibt unglaublich feine erdige Aromen der Champignons frei. Der hauchdünn geschnittene Speck zerschmilzt auf dem gratinierten Baguette regelrecht und ergibt sich seinem Schicksal… als ob das alles noch nicht genug wäre, schwebt über allem ein Hauch von Nichts, eine Speckluft, die so aromaintensiv ist, als würde man gerade in ein Stück besten Specks beißen. Das Gericht besticht durch seine ‚Einfachheit‘ & macht das Essen zu einem wahren Geschmackserlebnis…


Populär ist Christian Jürgens für den Gourmet unter uns schon seit längerem, so wurde er 2008 & 2013 zum Beispiel zum Koch des Jahres gewählt und gehört Jahr für Jahr mit 3 Sternen im Guide Michelin und 5 Punkten im Feinschmecker zu den TOP 10 der besten Köche Deutschlands. In den Medien ist CJ im Moment vor allem wegen seiner Jury- und Mentoren-Tätigkeit bei Game of Chefs vertreten.

Auch ich durfte Ihn dort kurz erleben, hatte ich es nach einigen Casting-Hürden doch tatsächlich in die ‚Auswahl‘-Shows der Sendung geschafft… leider konnte ich dort kein Messer (man benötigte 2 von 3 Messern, also Ja-Stimmen der Juroren, um in die nächste Runde einzuziehen) erkochen und erhielt somit auch keinen TV-Sendeplatz (thank god, so wurde es für mich dann nicht ganz so peinlich!). Trotzdem bleibt die kurze Zeit für mich aber unvergesslich, konnte ich doch 3 der besten Köche Deutschlands kennen lernen!

Somit war meine persönliche Game of Chef-Experience nur von kurzer Dauer, ich fiebere aber heute vor dem TV bzw. mittlerweile vor der Mediathek (der Sendeplatz wurde ja auf Sonntag Nacht 00.05 Uhr verschoben) mit vielen tollen Menschen mit, die ich während des Drehs kennen lernen durfte. Übrigens… ich weiß schon, wer die 100.000€ mit nach Hause nimmt…

Es war also klar, dass ich Christian Jürgens, einem meiner Koch-Idole, auf jeden Fall einmal nacheifern wollen würde… das hier ist jetzt meine Huldigung an ihn – für mich ist dieser Gang einer der aufregendsten, die ich seit langem gegessen habe! Hier jetzt meine Variante des ‘Speckbrots‘, bei der ich mich an Christian Jürgens Rezept aus seinem Buch ‘Christian Jürgens – Das Kochbuch‘ erschienen bei der Collection Rolf Heyne (aktuell vergriffen), orientiert habe.

REZEPT

für 4 Personen als Vorspeise

Speckluft :

  • 600g Schinkenspeck aus der Region
  • 1 Zwiebel
  • 1 Stange Stangensellerie
  • 1 Knoblauchzehe
  • 50ml Wermut (z.B. Noilly Brat)
  • 100ml Riesling
  • 1,5l Geflügelfond
  • 1 EL Olivenöl
  • 1 Lorbeerblatt
  • 1 Wacholderbeere
  • 1 Gewürznelke
  • 10 Pfefferkörner
  • 1 TL Soja-Lecithin

| Pilz-Rahm | 200g Champignons • 2 Schalotten • 2 Knoblauchzehen • 25ml Riesling • 750ml Geflügelfond • 200ml Sahne • 1 EL Butter • 25g Steinpilz- oder Trüffelbutter • 50g eiskalte Butter • Salz, Pfeffer aus der Mühle • frisch geriebene Muskatnuss • frischer Zitronensaft | Röstzwiebeln | 2 Schalotten • 2 EL Mehl (Type 550) • neutrales Pflanzenöl zum Frittieren • Salz | Nussbutter | 100g Butter | zum Anrichten | vier 3cm starke Scheiben Baguette • 8 hauchdünne Scheiben Schinkenspeck aus der Region

SPECKLUFT (am besten am Vortag vorbereiten!)
  • Die Zwiebel schälen und in feine Würfel schneiden. Den Staudensellerie putzen und in feine Ringe schneiden. Die Knoblauchzehe schälen und vom Keim befreien. Den Schinkenspeck in kleine Würfel schneiden.
  • Das Olivenöl in einem Topf erhitzen, Zwiebel, Knoblauch, Sellerie und Speckwürfel hinzugeben und farblos anschwitzen.
  • Mit Wermut und Riesling ablöschen, umrühren und etwas einreduzieren lassen.
  • Die Gewürze zugeben und mit dem Geflügelfond aufgießen. Alles bei mittlerer Hitze auf ein Drittel der Ausgansmasse einreduzieren lassen.
  • Den Fond durch ein feines Sieb abgießen und über Nacht abkühlen lassen. Das sich an der Oberfläche abgesetzte Fett abschöpfen.
  • Kurz vor dem Anrichten erneut erhitzten und das Lecithin mit einem Stabmixer untermixen.
  • Den so entstandenen festen Schaum mit einem Löffel von der Oberfläche abheben und auf den vorbereiteten Speckbroten anrichten.
PILZ-RAHM
  • Die Champignons putzen und würfeln. Die Schalotten schälen und ebenfalls würfeln.
  • Die Butter in einem Topf aufschäumen lassen und die Champignon- & Zwiebelwürfel darin bei mittlerer Temperatur farblos anschwitzen.
  • Mit dem Riesling ablöschen und den Fond angießen. Alles um ein Drittel einkochen lassen. Jetzt die Sahne angießen und erneut alles um ein Drittel reduzieren lassen.
  • Den Pilz-Rahm durch ein feines Sieb abgießen und mit Salz, frisch gemahlenem Pfeffer, Muskatnuss sowie frisch gepresstem Zitronensaft nach eigenem Gusto abschmecken.
  • Mit der Trüffel- bzw. Steinpilzbutter verfeinern und die geschälten Knoblauchzehen zugeben. Den Rahm für 20 Minuten ziehen lassen; dann den Knoblauch wieder entfernen.
  • Den Pilz-Rahm aufkochen und zum Abbinden die eiskalte Butter mit einem Schneebesen einrühren.
RÖSTZWIEBELN & NUSSBUTTER
  • Die Schalotten schälen und in feine Ringe schneiden. Die Schalotten-Ringe mit Mehl bestäuben und in Pflanzenfett bei 180°C goldbraun ausfrittieren. Auf Küchenkrepp abtropfen lassen und leicht salzen.
  • Für die Nussbutter die Butter in einem Topf schmelzen und bei kleiner Temperatur so lange erhitzen, bis die Butter eine dunkelbraune Farbe angenommen hat (ACHTUNG: die Butter verbrennt schnell!). Die Nussbutter durch ein feines Sieb abgießen.
ANRICHTEN
  • Den Ofen auf 200°C (Umluft + Grill) vorheizen. Die Baguette-Scheiben in den heißen Pilz-Rahm eintunken und mit der Kruste nach oben in 4 (am besten ovale) ofenfeste Förmchen setzen.
  • Den Rahm bis unter die Brotkruste angießen und die Kruste mit der Nussbutter bepinseln.
  • Die Baguette im Ofen in 10-15 Minuten goldbraun und knusprig gratinieren lassen.
  • Die gratinierten Baguette-Scheiben auf Teller setzen und mit Röstzwiebeln und je 2 Scheiben des Schinkenspecks belegen.
  • Mit einem Löffel etwas der aufgeschäumten Speckluft oben aufsetzen und sofort servieren.

Ich kann Euch wirklich nur ans Herz legen, dieses tolle Gericht auszuprobieren! Es verbindet Innovation und gut bürgerliche Küche auf so geschickte Weise, dass es sogar der stärkste Feinkost-Verächter lieben wird!

    Allein der Gedanke daran, so etwas vor sich auf dem Tisch, bzw. Teller zu haben, lässt mir das Wasser an den Mundwinkeln heruntertropfen! Ohne es ausprobiert zu haben, bin ich jetzt schon Junkie und melde mich direkt mit an zu den Anonymen-Speck-O-Holikern. Wobei, eigentlich möchte ich süchtig bleiben!

      Bin gerade dabei, für meine Eltern & Oma das Speckbrot zuzubereiten als Vorspeise fürs Sonntagsessen… normalerweise hab ich nicht so viele Zuschauer in der Küche… es muss sich wohl echt um ne harte Droge handel! Aber du hast Recht, es schmeckt einfach zu gut, als dass man clean werden wollte! ?
      Das mit dem Testessen bekommen wir bestimmt mal hin!

      Die aktuellen Folgen sind immer schon dienstags um 20.15 Uhr (in diesem Fall war das der 21.04.2015) in der VOXnow-Mediathek (LINK) abrufbar, also auf dem Original-Sendeplatz (nur nicht mehr im TV, sondern im Internet)… sonntags (also in diesem Fall gestern, 26.04.2015) strahlt VOX die aktuelle Folge dann um 00.05 Uhr im TV aus… das Finale kannst du übrigens auch bereits morgen abend um 20.15 Uhr im Internet bei VOXnow abrufen!

    ich habe diese Woche das Halbfinale im Internet verfolgt und war so begeistert von dem Speckbrot, dass ich mir fest vorgenommen hatte, es unbedingt einmal nachzukochen. Durch einen Zufall bin ich nun auf deinem Blog gelandet und wurde vom Speckbrot empfangen. Ich würde sagen: Perfektes Timing! Jetzt steht dem Nachkochen wirklich nichts mehr im Weg!     (player) แล้วได้ไพ่สองใบแรกออกแต้มมาเป็น 0-5 แต้ม ท่านจะต้องเรียกไพ่ใบที่ 3 โดยอัตโนมัติ ถ้าไพ่ออกมาได้ 5-6
    แต้ม ท่านจะต้องคอยฝั่งตรงข้ามคือฝั่งเจ้ามือ (banker) ว่าได้แต้มเท่าไร ถ้าฝั่งเจ้ามือได้ 8-9 แต้มก็จะจบเกมในทันที เพราะเป็นแต้มที่สูงที่สุดของไพ่แล้ว แล้วก็อีกอย่างที่ท่านจำต้องทราบเกี่ยวกับกติกาก็คือกรรมวิธีนับคะแนน หรือการออกแต้มของไพ่ ซึ่งถ้าหากไพ่ออกมาเป็น A = 1แต้ม , ถ้าหากได้ไพ่ J Q K 10 = 0 แต้ม , แม้ออกไพ่มา
    2-9 = 2-9 แต้ม แม้ได้ไพ่มาก็สามารถนับแต้มได้ตามไพ่ได้เลยกระบวนการเลือกพนัน เราสามารถเลือกลงเดิมพันได้หลายแบบอย่าง ดังต่อไปนี้-ฝั่งผู้เล่น ถ้าเราเลือกลงทุนฝั่งเจ้ามือ (player) แล้วแต้มออกมาสูงกว่าอีกฝั่งท่านจะชนะ โดยมีอัตราผลตอบแทนคือ 1
    : 1 ถ้าเกิดพวกเราเลือกลงทุนฝั่งเจ้ามือ (banker) แล้วไพ่ออกมาแต้มสูงหรือมากกว่าอีกฝั่งจะมีอัตราผลตอบแทนคือ 1 :
    0.95 -การเลือกลงทุนแบบเสมอหรือTIEนั้น หากไพ่ส่งผลออกมาเท่ากันระหว่างผู้เล่น(player) กับเจ้ามือ(banker) ยกตัวอย่างเช่น 4-4 5-5 8-8 2-2
    เพียงแค่ไพ่ออกแต้มมาเท่ากัน ท่านก็จะสำเร็จตอบแทนมากยิ่งกว่าการลงพนันแบบธรรมดาถึง 8 เท่า -การลงพนันอีกต้นแบบนึงคือ การเลือกพนันแบบโบนัส(Bonus) เป็นการลงพนันโดยจะต้องลุ้นให้ไพ่ที่ออกมานั้นห่างกันมากยิ่งกว่า 4 แต้ม ดังเช่นว่า
    ถ้าท่านเลือกลงเดิมพันฝั่งเจ้ามือ(banker) ไพ่ฝั่งผู้เล่นออกแต้มมา 2 แต้ม
